The Tale of Too Much Butter

Once upon a time there was a girl.  This girl loved to cook.  Being that it was Thanksgiving, this girl decided to make sweet potato casserole - because sweet potatoes are full of yummy goodness.

After finding a recipe, she gathered her ingredients and started this new cooking adventure. 

She roasted, peeled, and mashed the potatoes.  

She added in the milk, sugar, eggs, vanilla, and salt.

After mixing the sweet potato concoction, it was time to make the crumbly, crunchy topping.

And this, my friends, is where the story gets interesting...

To the melody of brown sugar, oats, and flour she added a touch of nutmeg and a dash of cinnamon.  And butter.  A lot of butter.  (Please let it be noted that 3/4 of a stick of butter and 3/4 of a cup of butter are two very different things)  Though the recipe called for 3/4 of a stick of butter, this girl was too wrapped up in her delight of Thanksgiving and all things happy that she did not pay proper attention to the measurement and instead, added 3/4 of a cup of butter.  She used her hands to work the butter into the dry ingredients and thought to herself, "My!  This is not as crumbly as I was expecting...it's almost like cookie dough.  How strange...".  It was then that she realized her error.

Now, you may be expecting a very sad ending to this story, but you'll be enchanted to hear that this mistake was a very good mistake to have been made.  After adding a bit more flour, oats, and brown sugar to the bowl (in order to balance out the butter to dry ingredients ratio a bit) the cookie style topping was crumbled over the top of the sweet potatoes.  The final touch... pecans, sprinkled over half of the dish.  In the oven for 25 minutes then whisked away to the Thanksgiving banquet. 


Oh. My. Word.    
Good.
Really good.
Fantastic.

And I'll live happily ever after.
