{Mahi Mahi} Fish Tacos

Fish tacos are one of those things that I enjoy ordering out at a restaurant, but I never think to make them at home.  Well, last night we ended that silliness and I made mahi mahi tacos complete with homemade cabbage slaw.  Boy, were they scrumptious!!  Make these soon.  Very soon.



{Mahi Mahi} Fish Tacos

      *makes enough for 8 small tacos
      **these aren't very exact measurements, so you can easily make more of this recipe to feed more people
2 fillets mahi mahi
4 thin lemon slices
Salt, pepper, cumin, and chili powder to taste
Small corn tortillas

Slaw:
1/2 head cabbage, thinly sliced
1/2 red onion, diced
4 radishes, thinly sliced
Small bunch cilantro, roughly chopped

Dressing:
Dollip of ranch dressing
4 dashes of hot sauce
2 dashes dried oregano
1 generous squirt fresh lemon juice

1. Prepare the fish by placing the fillets on a piece of foil.  Sprinkle with a bit of salt, pepper, cumin, and chili powder and cover with the lemon slices.  Place another piece of foil over the top of the fish and wrap up the packet.  Place in a 350 degree oven for about 20-25 minutes.
2.  While the fish cooks, make the slaw.  Chop all the slaw ingredients and throw them into a bowl.
3.  Make the dressing.  Combine all ingredients, stir together, and pour over the slaw.  Mix the slaw until the dressing is distributed throughout.
4.  Heat the tortillas by placing them, one at a time, in an ungreased skillet over medium heat. Heat each side for 20-30 seconds, until warm and pliable.
5.  Assemble the tacos by placing small chunks of fish on the tortillas and topping with the slaw.
